Keto Recipe: Spicy Slow Cooker Shredded Pork


Shredded pork is a constant in my household. It’s delicious by itself or when added to other dishes like pork rind nachos, quesadillas, or soft tacos (with low carb tortillas). You can crank up the seasoning if you like your food even spicier.

It’s just such an easy staple to keep in the fridge and heat up whenever you need. Not to mention the fact that it makes the whole house smell amazing! I have a super basic slow cooker, like this one. I would say it is probably the kitchen appliance I have used more than anything else I have ever purchased. Especially now that I work from home, it is so simple to throw something in early in the day, enjoy the smells all day, and then have dinner ready in minutes later in the day!

Spicy Slow Cooker Shredded Pork

  • 1 lb pork butt roast

  • Salt and pepper

  • 1 tbsp dried oregano

  • 1 tbsp ground cumin

  • 1/2 small onion, diced

  • 2 garlic cloves, minced

  • 1 jalapeño, chopped

  • 1/2 lime, juiced

DIRECTIONS

  1. Season the pork with salt and pepper, and the oregano and cumin.

  2. In the slow cooker, add the pork and top it with the onion, garlic, jalapeño, and lime juice.

  3. Cover and cook on low for 8 hours.

  4. Shred the meat with 2 forks.
