CHICKEN AND GREEN CHILE SOUP

I fell in love with green chiles when I lived in Santa Fe, New Mexico, and cooking with them now always brings back memories of that beautiful state. This soup is another meal that comes together in just minutes using a pressure cooker, but you’d never know it from its deep, rich flavors. If you’re dairy-free, you can omit the sour cream and instead add ½ cup canned coconut milk and ½ table-spoon fresh lemon juice—the consistency will be the same and the results are just as delicious!

ITALIAN MEATBALL SOUP

It can be challenging to find keto versions of Italian food- after all, carbs are at the center of many Italian dishes- but this amazing meatball soup will make you feel like you’re sitting at a cute little café on the streets of Italy. With the classic flavors of fresh garlic, parmesan, and basil; a rich tomato broth; and tender, bite-size meatballs, this soup will satisfy all of your Italian food cravings.

CHICKEN ‘NO TORTILLA’ SOUP

I LOVE chicken tortilla soup and the difference between this and the higher carb version is that I simply bake my own tortilla strips using low carb tortillas and I omit corn. Every time I make this I make a double batch and eat it for days!!

CHICKEN COCONUT CURRY SOUP

I love a slow cooker soup. It makes you feel so accomplished when you come home to delicious smells and a simmering dish sitting there waiting for you! You can eat this as is or serve it over cauliflower rice- both ways are fantastic. If you plan to serve it over a cauliflower rice, you can leave the cauliflower florets out of the soup.

INSTANT POT PORK BELLY RAMEN WITH VEGGIE NOODLES

I love a nice steamy bowl of ramen, and just because I can’t eat traditional noodles doesn’t mean I can’t re-create a keto-friendly version with veggie noodles. For me, the best part about ramen is the toppings, especially the soft-cooked egg added just before serving. Fresh herbs, jalapeño, and lime juice are a few of my other favorites, but you do you!

PRESSURE COOKER TIP

You can soft-cook your egg in the pressure cooker, too! Pour 1 cup water into the Instant Pot. Place a trivet with handles in the pot and add the eggs to the trivet. Secure the lid on the pot and close the pressure-release valve. Set the pot to HIGH pressure for 2 minutes. At the end of the cooking time, immediately quick-release the pressure. Transfer the eggs to a bowl of ice water to quick cool.

Creamy Tomato-Basil Soup

There is something so homey about tomato soup. It reminds me of snow days when I was a kid—though of course back then my bowl of soup was always paired with a grilled cheese. You can bring those same flavors together here by combining this creamy soup with my Cheese Crisps (see recipe below) or a sprinkle of the shredded cheese of your choice. Throw on your favorite sweater and dig in!
